I've been meaning to get this recipe typed up on here. It's one of the best cookie/muffin recipes that I have. It produces a muffin that tastes like a chocolate chip cookie, or a chocolate chip cookie that feels like a muffin. Follow the recipe and directions exactly for best results. Makes 12, can be doubled successfully.
Ingredients:
-1 C Flour
-1 t. baking powder
-1/4 t. salt
-1/2 c. margarine, melted
-1 C packed light brown sugar
-1 egg
-1 t. vanilla
-1 C Chocolate Chips (the Enjoy Life ones work well because they are mini, but any milk-free ones will do)
Directions:
Preheat oven to 375 degrees, spray a 12 muffin tin or 12 muffin top pan generously with cooking spray, do the edges too, not just the cups. -OR- use cupcake papers. (I make mine in the muffin to pan and they come out well, a mini muffin tin (24) works well too.
Mix flour, baking powder, and salt in a small bowl- set aside.
Melt margarine in either the microwave in 30 second intervals until melted, or on stovetop. Add brown sugar and mix well. Let cool a little.
Stir in egg and vanilla until smooth.
Stir in flour mixture in two portions. Add Chocolate chips.
Portion out a little less than 1/4 cup into each muffin cup and smooth tops with a rubber spatula.
Bake until JUST SET about 15-17 minutes. Cool completely before trying to remove from the pans. Use a butter knife to loosen and pop them out. If the bottom stays in just pop that out and stick them back together, it will hold.
