Pumpkin Pancakes - Milk Free Recipes

‎1 cup canned pumpkin
2 eggs
1/2 cup rice milk (could use oat milk)
1 cup oat flour
1cup brown rice flour
2 tsp baking powder (non aluminum)
1 tsp. salt
1 tsp. cinnamon
canola oil on the griddle.

Combine pumpkin, eggs and rice milk in a med size bowl In a seperate bowl, stir together the flours, baking powder, salt, cinnamon. Add dry ingredients to wet. and mix well. Cook on oiled griddle.
